  • 1 lb fresh or frozen shrimp (deveined)
  • 8 oz fettuccine or linguine
  • 1 cup full-fat coconut milk
  • 1 cup sliced red and yellow bell peppers
  • 3 cloves garlic (minced)
  • 2 tbsp jerk seasoning
  • Juice of 1 lime

Instructions

  1. Boil salted water in a large pot. Cook pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
  2. In a large skillet over medium heat, melt 2 tbsp butter. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add shrimp to the skillet; cook until pink and opaque (about 3-5 minutes).
  4. Stir in sliced bell peppers and sauté for an additional 3-4 minutes until tender-crisp.
  5. Lower heat; pour in coconut milk and add jerk seasoning. Simmer for about 5 minutes to meld flavors.
  6. Toss cooked pasta into the skillet, mixing well to coat evenly. Heat through for another couple of minutes.
  7. Remove from heat; squeeze fresh lime juice over the dish before serving.
