- 8 oz fettuccine or linguine
- 1 cup full-fat coconut milk
- 1 cup sliced red and yellow bell peppers
- 3 cloves garlic (minced)
- 2 tbsp jerk seasoning
- Juice of 1 lime
Instructions
- Boil salted water in a large pot. Cook pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
- In a large skillet over medium heat, melt 2 tbsp butter. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add shrimp to the skillet; cook until pink and opaque (about 3-5 minutes).
- Stir in sliced bell peppers and sauté for an additional 3-4 minutes until tender-crisp.
- Lower heat; pour in coconut milk and add jerk seasoning. Simmer for about 5 minutes to meld flavors.
