  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, room temperature
  • 1 cup sour cream (full-fat)
  • ¾ cup granulated sugar
  • ¼ cup fresh lemon juice
  • 2 tbsp fresh lime juice
  • ½ cup chopped pistachios (lightly toasted)
  • 1 cup fresh or frozen cherries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter until it resembles wet sand. Press into the bottom of a springform pan.
  2. Bake the crust for 10 minutes until golden brown. Let cool.
  3. In a bowl, beat cream cheese until smooth. Gradually add sugar, mixing until fluffy. Blend in sour cream, lemon juice, lime juice, and chopped pistachios.
  4. Pour filling over the cooled crust and smooth the top with a spatula.
  5. Bake for 45-50 minutes until slightly set but still wobbly in the center.
  6. Cool at room temperature before refrigerating for at least four hours or overnight.
  7. Serve chilled with fresh cherries and whipped cream if desired.
