  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 large eggs
  • 1 cup fresh raspberries
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. For the crust, beat together softened butter and granulated sugar until fluffy. Gradually add flour, mixing until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. While it bakes, whisk together eggs, granulated sugar, lemon juice, lemon zest, and flour until smooth.
  5. Gently fold in fresh raspberries into the lemon mixture.
  6. Pour the filling over the baked crust and return to the oven. Bake for an additional 20-25 minutes until set with a slight jiggle in the center.
  7. Allow to cool completely before cutting into squares and dust with powdered sugar before serving.
