  • 1 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • ½ cup panko breadcrumbs
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp toasted sesame oil
  • 2 green onions, chopped (for garnish)
  • 2 tbsp toasted sesame seeds (for garnish)
  • 2 cups mixed vegetables (broccoli, bell peppers, snap peas)
  • Cooked jasmine rice or quinoa (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, grated ginger, minced garlic, panko breadcrumbs, and soy sauce. Mix until just combined.
  3. Roll the mixture into meatballs (about two tablespoons each) and place them on a lined baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through (internal temperature of 165°F/74°C).
  5. While meatballs bake, whisk together honey, soy sauce, sesame oil, and a splash of water in a saucepan over medium heat until slightly thickened.
  6. Toss baked meatballs in the sauce until well coated.
  7. Assemble bowls with rice or quinoa at the bottom, topped with vegetables and meatballs. Garnish with green onions and sesame seeds before serving.
