- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 lb baby potatoes, halved
- 2 fresh lemons, juiced and zested
- 1/4 cup balsamic vinegar
- 4 cloves fresh garlic, minced
- 1/4 cup extra virgin olive oil
- 1 tsp dried rosemary or thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, lemon juice, lemon zest, salt, pepper, and herbs.
- Marinate chicken and potatoes in a zip-top bag with half of the marinade for at least 30 minutes.
