- 12 jumbo pasta shells
- 1 pound fresh shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1 cup ricotta cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons unsalted butter
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 1 cup marinara sauce
Instructions
- Boil salted water and cook jumbo pasta shells until al dente. Drain and cool.
- In a skillet, melt butter over medium heat. Sauté minced garlic until fragrant, then add shrimp and cook until pink (3-4 minutes).
- In a bowl, mix cooked shrimp (chopped), ricotta cheese, Parmesan cheese, lemon juice, parsley, salt, and pepper until well combined.
- Preheat oven to 375°F (190°C). Fill each pasta shell with the shrimp mixture.
- Spread marinara sauce in a baking dish and arrange stuffed shells on top. Add more sauce and sprinkle with Parmesan.
- Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until golden.
