Description

Ingredients

  • 12 jumbo pasta shells
  • 1 pound fresh shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1 cup marinara sauce

Instructions

  1. Boil salted water and cook jumbo pasta shells until al dente. Drain and cool.
  2. In a skillet, melt butter over medium heat. Sauté minced garlic until fragrant, then add shrimp and cook until pink (3-4 minutes).
  3. In a bowl, mix cooked shrimp (chopped), ricotta cheese, Parmesan cheese, lemon juice, parsley, salt, and pepper until well combined.
  4. Preheat oven to 375°F (190°C). Fill each pasta shell with the shrimp mixture.
  5. Spread marinara sauce in a baking dish and arrange stuffed shells on top. Add more sauce and sprinkle with Parmesan.
  6. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until golden.
