  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh pineapple chunks
  • 1 can (15 oz) black beans, rinsed
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • ¼ cup fresh cilantro (for garnish)
  • 2 tsp chili powder
  • 2 tsp cumin
  • 4 cups low-sodium chicken broth
  • Juice of 1 lime

Instructions

  1. Chop the onion, red bell pepper, and garlic.
  2. In a skillet over medium heat, sauté the onion and bell pepper until softened (about 5 minutes).
  3. Place the chicken breasts in the slow cooker; add sautéed vegetables.
  4. Sprinkle chili powder and cumin over the chicken.
  5. Add pineapple chunks and drained black beans on top.
  6. Pour low-sodium chicken broth over all ingredients until just covered.
  7. Squeeze lime juice on top.
  8. Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
  9. Shred the chicken in the pot with two forks; stir to combine flavors.
  10. Serve hot, garnished with cilantro.
