  • 4 boneless skinless chicken breasts (about 500g)
  • 3 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, minced
  • 1 medium onion, chopped
  • 1 cup tomato puree (240g)
  • 1 cup coconut milk (240ml)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 2 tsp garam masala
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Cut chicken into bite-sized pieces and season lightly with salt and pepper.
  2. In a large pan over medium heat, warm oil until shimmering. Add onions and sauté until translucent.
  3. Stir in garlic and ginger; cook for another minute until fragrant.
  4. Add cumin, coriander, turmeric, and garam masala; stir to coat the mixture evenly.
  5. Pour in tomato puree followed by coconut milk; mix gently to create a sauce.
  6. Reduce heat to low, cover the pan, and simmer for 15-20 minutes until the chicken is cooked through.
  7. Serve hot over steamed rice or with naan bread, garnished with fresh cilantro.
