  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup fresh cilantro, chopped
  • 1 tsp red chili flakes (adjust to taste)
  • Juice of 2 limes
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 1 bell pepper (red or yellow), chopped
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic; sauté until fragrant and onions are translucent.
  2. Season the chicken breasts with salt and pepper. Add them to the skillet and cook each side until golden brown, about 5-6 minutes per side.
  3. Stir in the chopped bell pepper and cook for an additional 3-4 minutes until slightly softened.
  4. Lower the heat and pour in the coconut milk along with lime juice. Stir well to combine.
  5. Add red chili flakes according to your preferred spice level. Simmer gently for 10-15 minutes until the chicken is cooked through.
  6. Just before serving, stir in freshly chopped cilantro and adjust seasoning as needed. Serve hot over fluffy rice or with crusty bread.
