Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
- In a bowl, mash half of the strawberries and leave the rest whole.
- In a separate bowl, whisk together flour, sugar, baking powder, and salt.
- In another large bowl, combine melted butter, eggs, milk, vanilla extract, and mashed strawberries until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined. Add in the remaining chopped strawberries.
- Spoon the batter into muffin cups until two-thirds full and bake for 18-20 minutes or until golden brown.
- Cool in the pan for 5 minutes before transferring to a wire rack.
