Description

Summer Berry and Peach Cheesecake is a refreshing, no-bake dessert bursting with the sweetness of ripe summer fruits.   • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 2 ripe peaches (chopped)
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until moistened. Press into the bottom of a 9-inch springform pan.
  2. Bake crust for 8-10 minutes until golden. Cool completely.
  3. Beat softened cream cheese and sour cream in a large bowl until smooth. Gradually add powdered sugar and vanilla, mixing until combined.
  4. Fold in chopped peaches gently.
  5. Pour the peach filling over the cooled crust, smoothing the top. Cover with plastic wrap and refrigerate for at least 4 hours.
  6. Before serving, top with fresh mixed berries.
