- 1 tsp vanilla extract
- 2 tbsp powdered sugar
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, granulated sugar, and melted butter until sandy. Press firmly into the bottom of the pan and bake for 10 minutes until golden.
- In a bowl, blend cream cheese until smooth. Add sour cream, vanilla extract, and granulated sugar; mix well.
- Gently fold in sliced peaches and half of the mixed berries into the cream mixture.
- Pour the filling over the crust and smooth the top. Bake for 50-60 minutes until slightly jiggly in the center.
- Cool in the oven with the door ajar for an hour, then chill in the refrigerator for at least four hours.
- Before serving, whip heavy cream with powdered sugar until soft peaks form; spread over the cheesecake and garnish with remaining berries.
