  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 ripe peaches, thinly sliced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, granulated sugar, and melted butter until sandy. Press firmly into the bottom of the pan and bake for 10 minutes until golden.
  3. In a bowl, blend cream cheese until smooth. Add sour cream, vanilla extract, and granulated sugar; mix well.
  4. Gently fold in sliced peaches and half of the mixed berries into the cream mixture.
  5. Pour the filling over the crust and smooth the top. Bake for 50-60 minutes until slightly jiggly in the center.
  6. Cool in the oven with the door ajar for an hour, then chill in the refrigerator for at least four hours.
  7. Before serving, whip heavy cream with powdered sugar until soft peaks form; spread over the cheesecake and garnish with remaining berries.
