  • 14 oz firm tofu, drained and pressed
  • 2 tbsp coconut oil
  • 1/2 cup cashews (raw or roasted)
  • 1 cup bell peppers (sliced)
  • 1 cup broccoli florets
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp maple syrup
  • 2 garlic cloves (minced)
  • 1 tsp ginger root (grated)
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Drain the tofu and press between paper towels to remove moisture. Cut into cubes.
  2. Heat coconut oil in a large skillet over medium heat.
  3. Add tofu cubes, cooking until golden brown on all sides (about 8–10 minutes).
  4. Stir in bell peppers and broccoli; sauté for another 5 minutes until tender-crisp.
  5. In a bowl, whisk together soy sauce, maple syrup, garlic, and ginger. Pour over the stir-fry while gently stirring.
  6. Fold in cashews and cook for an additional 2–3 minutes until everything is well coated.
  7. Garnish with sesame seeds before serving.
