- 14 oz firm tofu, drained and pressed
- 2 tbsp coconut oil
- 1/2 cup cashews (raw or roasted)
- 1 cup bell peppers (sliced)
- 1 cup broccoli florets
- 3 tbsp low-sodium soy sauce
- 2 tbsp maple syrup
- 2 garlic cloves (minced)
- 1 tsp ginger root (grated)
- 1 tbsp sesame seeds (for garnish)
Instructions
- Drain the tofu and press between paper towels to remove moisture. Cut into cubes.
- Heat coconut oil in a large skillet over medium heat.
- Add tofu cubes, cooking until golden brown on all sides (about 8–10 minutes).
- Stir in bell peppers and broccoli; sauté for another 5 minutes until tender-crisp.
- In a bowl, whisk together soy sauce, maple syrup, garlic, and ginger. Pour over the stir-fry while gently stirring.
- Fold in cashews and cook for an additional 2–3 minutes until everything is well coated.
- Garnish with sesame seeds before serving.
