  • 1 cup Pineapple Chunks (fresh or canned)
  • 2 Bell Peppers (1 red, 1 green), diced
  • 1 tbsp Fresh Ginger, grated
  • 1/4 cup Low-Sodium Soy Sauce
  • 2 tbsp Brown Sugar
  • 3 Garlic Cloves, minced
  • 1 tbsp Cornstarch
  • 1 tsp Sesame Oil
  • 2 Green Onions, sliced (for garnish)

Instructions

  1. Prep your ingredients by chopping chicken into bite-sized pieces and dicing bell peppers. If using fresh pineapple, cut it into chunks.
  2. Marinate the chicken in a bowl with soy sauce, brown sugar, garlic, ginger, and sesame oil for about 15 minutes.
  3. Heat oil in a large skillet over medium-high heat. Sauté bell peppers for about 3-5 minutes until vibrant.
  4. Push the vegetables to one side and add the marinated chicken and pineapple to the skillet. Cook until the chicken is browned on all sides (7-10 minutes).
  5. Mix cornstarch with a little water until smooth; stir into the skillet until the sauce thickens slightly (2-3 minutes).
