  • 1/2 cup brewed espresso or strong coffee (cooled)
  • 2 tbsp cocoa powder
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Create the Graham Cracker Crust: In a bowl, mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of a springform pan.
  2. Prepare the Cheesecake Filling: Beat mascarpone cheese with powdered sugar until smooth. Gently fold in whipped heavy cream until fully incorporated.
  3. Add Coffee Flavoring: Slowly fold cooled coffee into the mixture, being careful not to deflate the whipped cream.
  4. Layer It Up: Spoon half of the filling over the crust, dust with cocoa powder, then add remaining filling and smooth out.
  5. Chill: Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Serve: Remove from springform pan, dust with cocoa powder or chocolate shavings before slicing.
