  • 1 cup fresh pineapple juice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp grated fresh ginger
  • 3 garlic cloves, minced
  • 2 tbsp freshly squeezed lime juice
  • 1 cup pineapple slices (for grilling)

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, ginger, garlic, and lime juice.
  2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal tightly and marinate in the refrigerator for at least 1 hour (or overnight for deeper flavor).
  3. Preheat your grill to medium-high heat (375°F/190°C).
  4. Remove chicken from marinade (discard any leftover marinade) and grill for 6-8 minutes per side until internal temperature reaches 165°F (75°C).
  5. In the last few minutes of grilling, add pineapple slices to the grill and cook until caramelized (about 2-3 minutes per side).
  6. Allow chicken to rest for 5 minutes before slicing. Serve with grilled pineapple on top or alongside.
