- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 medium onion, chopped
- 2–3 garlic cloves, minced
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups frozen mixed vegetables
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, sauté chopped onions in olive oil until soft (about 5 minutes). Add minced garlic and cook until fragrant.
- In a large bowl, combine sautéed onions and garlic with rice, chicken broth, cream of mushroom soup, mixed vegetables, thyme, salt, and pepper.
- Place seasoned chicken breasts on top of the rice mixture in the baking dish.
- Cover with aluminum foil and bake for approximately 45 minutes until the chicken is cooked through and the rice is tender. Remove foil during the last 10 minutes for a golden top.
- Let rest for about 10 minutes before serving.
