  • 3 lbs beef chuck roast
  • 2 medium sweet onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup high-quality tomato sauce
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 cup low-sodium beef broth
  • 2 bell peppers (mixed colors), sliced
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients by chopping onions and slicing bell peppers.
  2. In a skillet over medium-high heat, sear the beef chuck roast for about 5 minutes on each side until browned.
  3. Remove the roast and sauté sliced onions and minced garlic in the same skillet until translucent (about 3-4 minutes).
