Instructions
- Bring a large pot of salted water to a boil. Add potatoes and cook until fork-tender, about 15-20 minutes.
- Drain in a colander and let sit for 5 minutes to cool and release steam.
- On a lined baking sheet, space out cooled potatoes and gently smash each to about half an inch thick.
- Drizzle olive oil over each potato and sprinkle with sea salt, pepper, garlic powder, and herbs.
- Preheat oven to 450°F (230°C) and bake for 25-30 minutes until golden brown and crispy.
