Ingredients

  • 1 lb small Yukon Gold or red potatoes
  • 3 tbsp extra virgin olive oil
  • 1 tsp coarse sea salt
  • ½ tsp fresh cracked pepper
  • 1 tsp garlic powder
  • 1 tbsp fresh herbs (e.g., rosemary or thyme), chopped
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until fork-tender, about 15-20 minutes.
  2. Drain in a colander and let sit for 5 minutes to cool and release steam.
  3. On a lined baking sheet, space out cooled potatoes and gently smash each to about half an inch thick.
  4. Drizzle olive oil over each potato and sprinkle with sea salt, pepper, garlic powder, and herbs.
  5. Preheat oven to 450°F (230°C) and bake for 25-30 minutes until golden brown and crispy.
  6. Remove from oven, sprinkle with optional Parmesan while hot, and serve immediately.
