Ingredients

  • 1 cup dried green or brown lentils
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tablespoons curry powder
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add garlic and ginger; cook for 1 minute until fragrant.
  3. Stir in curry powder, salt, and pepper; cook for another minute to release the spices’ aroma.
  4. Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes until lentils are tender.
  5. Stir in coconut milk and simmer for an additional 5 minutes.
  6. Fold in spinach or kale until wilted; finish with lime juice before serving.
