- 8 oz rice noodles (or egg noodles)
- 1 cup bell peppers, sliced (mixed colors)
- 1 cup broccoli florets
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- ¼ cup low-sodium soy sauce
- 2 tsp sesame oil
- 1 tbsp honey
- 1 tsp fresh ginger, grated
Instructions
- Prep all ingredients: chop veggies and mince garlic and ginger.
- Cook noodles as per package instructions until tender; drain and set aside.
- Heat oil in a large skillet over medium-high heat. Add shrimp; cook until pink and opaque (3-4 minutes). Remove from pan.
- In the same skillet, stir-fry bell peppers, broccoli, garlic, and ginger for about 5 minutes.
- Return shrimp to the skillet with cooked noodles. Add soy sauce, honey, and sesame oil. Mix well for another 2-3 minutes until heated through.
- Serve hot, garnished with sesame seeds or green onions if desired.
