Ingredients

  • 1 can (15 oz) low-sodium chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse chickpeas under cold water and drain well.
  2. Dice cherry tomatoes and cucumber into bite-sized pieces. Finely chop red onion and parsley.
  3. In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad mixture and toss gently until evenly coated.
  5. Chill in the fridge for at least 30 minutes before serving to allow flavors to meld.
