- 1 can (15 oz) low-sodium chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Rinse chickpeas under cold water and drain well.
- Dice cherry tomatoes and cucumber into bite-sized pieces. Finely chop red onion and parsley.
- In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad mixture and toss gently until evenly coated.
- Chill in the fridge for at least 30 minutes before serving to allow flavors to meld.
