  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup diced bell peppers (red, yellow, green)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 cups low-sodium vegetable broth
  • Juice and zest of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and minced garlic until translucent (3-4 minutes).
  2. Stir in the rinsed quinoa and spices. Pour in vegetable broth; bring to a gentle boil.
  3. Reduce heat to low and add black beans, corn, and bell peppers. Cover and simmer for 15 minutes until quinoa is fluffy.
  4. Remove from heat, squeeze fresh lime juice over the top, fluff with a fork, and garnish with cilantro if desired.
