- 1 lb lean ground beef
- 2 cups fresh spinach, chopped
- 4 cloves garlic, minced
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 2 large eggs
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add chopped spinach and cook until wilted (about 3 minutes). Set aside.
- In a large bowl, combine ground beef, sautéed spinach and garlic, breadcrumbs, eggs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix gently to avoid overworking the meat.
- Form the mixture into small meatballs (about the size of golf balls) and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through.
- Remove from the oven and sprinkle shredded mozzarella on top of each meatball. Return to the oven for an additional 5 minutes until melted.
