  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (plain or Italian)
  • 1 cup freshly grated parmesan cheese (divided)
  • 2 cups whole milk mozzarella cheese
  • 2 cups marinara sauce
  • Fresh basil leaves for garnish
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with half of the parmesan.
  2. Dip each chicken breast into the flour, then the egg mixture, followed by the breadcrumb mixture.
  3. In a large skillet over medium heat, heat olive oil and sear breaded chicken pieces until golden brown on both sides (about 3-4 minutes per side).
  4. Transfer the chicken to a baking dish, cover with marinara sauce, and sprinkle remaining parmesan and mozzarella on top.
  5. Bake for 20-25 minutes until bubbly and golden. Garnish with fresh basil before serving.
