  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt (adjust to taste)

  • 1 drop black food coloring
  • 1 drop green food coloring
  • 3 pimento olives (sliced in half for eyeballs)
  • Paprika for garnish
  • Chives or green onions (for garnish)

Instructions

  1. Boil the Eggs: Place the eggs in a pot and cover with cold water. Bring to a boil over medium heat. Once boiling, cover the pot, remove from heat, and let sit for 12 minutes. Transfer to an ice bath for cooling.
  2. Peel the Eggs: After cooling for about 5 minutes, gently crack each egg on the counter and peel under running water.
  3. Prepare the Filling: Slice the eggs in half lengthwise and scoop out the yolks into a mixing bowl. Add mayonnaise, Dijon mustard, salt, and pepper; mix until smooth.
  4. Add Food Coloring: Divide the yolk mixture into two bowls; color one half with black food coloring and leave the other yellow. Swirl them together slightly for a marbled effect.
  5. Fill the Eggs: Using a piping bag or spoon, fill each egg white half with the colored yolk mixture, allowing some to spill out for spooky flair.
  6. Create Eyeballs: Top each filled egg with half of a pimento olive as an eyeball. Sprinkle paprika on top and garnish with chives or green onions.
