  • 34 boneless, skinless chicken breasts
  • 4 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1/4 cup fresh cilantro, chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Sour cream (optional)

Instructions

  1. Season chicken breasts with chili powder, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and let it rest before shredding it with two forks.
  4. Lay out the flour tortillas on a clean surface. Place shredded chicken in the center of each tortilla, sprinkle with cheese and fresh cilantro.
  5. Fold the sides of each tortilla inwards and roll tightly from bottom to top. Place seam side down on a parchment-lined baking sheet.
  6. Preheat oven to 375°F (190°C) and bake for 15-20 minutes until golden brown and crispy.
  7. Serve hot with sour cream on the side.
