  • 1 lb shrimp, deveined and peeled
  • 2 ripe avocados, diced
  • 1 ripe mango, diced
  • 2 limes, juiced
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the mango, dice the avocado, finely chop the red onion, and roughly chop cilantro.
  2. In a skillet over medium heat, add olive oil until shimmering. Season shrimp with salt and pepper; cook for 4-5 minutes until pink and opaque.
  3. In a mixing bowl, combine mango, red onion, cilantro, lime juice, salt, and pepper for the mango salsa.
  4. Assemble your bowls by layering diced avocado first, followed by cooked shrimp and a generous scoop of mango salsa.
