  • 2 stalks celery, chopped
  • 2 medium Yukon gold potatoes, diced (about 2 cups)
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup cream or coconut milk
  • 1 tsp fresh thyme
  • 1 bay leaf
  • 2 cups spinach or kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add onions, carrots, and celery; sauté until softened (about 5 minutes).
  2. Stir in garlic, thyme, and bay leaf; cook for an additional minute.
  3. Add potatoes and greens to the pot, then pour in vegetable broth until submerged. Bring to a gentle boil.
  4. Reduce heat and simmer for about 20 minutes until potatoes are tender.
  5. Remove the bay leaf and blend half of the soup with an immersion blender for creaminess. Stir in cream or coconut milk.
  6. Taste and adjust seasoning with salt and pepper before serving hot.
