- 1 bay leaf

Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Sauté chopped onions for 5 minutes until translucent. Add minced garlic and cook for another minute.
- Stir in carrots, celery, and potatoes; sauté for an additional 5 minutes until veggies soften slightly.
- Pour in vegetable broth along with thyme and bay leaf; bring to a gentle simmer for about 20 minutes until vegetables are tender.
- Remove bay leaf. Blend half of the soup using an immersion blender or regular blender until creamy.
