  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 cups potatoes, peeled and cubed
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium)
  • 1 cup heavy cream (or coconut milk)
  • 2 tsp fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups spinach or kale (optional)

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Sauté chopped onions for 5 minutes until translucent. Add minced garlic and cook for another minute.
  2. Stir in carrots, celery, and potatoes; sauté for an additional 5 minutes until veggies soften slightly.
  3. Pour in vegetable broth along with thyme and bay leaf; bring to a gentle simmer for about 20 minutes until vegetables are tender.
  4. Remove bay leaf. Blend half of the soup using an immersion blender or regular blender until creamy.
  5. Stir in heavy cream (or coconut milk) and optional greens; let them wilt.
  6. Season with salt and pepper to taste before serving hot.
