Ingredients

  • 1 ripe avocado, cubed
  • 1/2 cup feta cheese, crumbled (or goat cheese)
  • 1/4 cup walnuts or almonds, toasted
  • 3 tablespoons balsamic vinaigrette

Instructions

  1. Rinse mixed greens under cold water and pat dry.
  2. Halve cherry tomatoes and dice cucumbers into bite-sized pieces.
  3. Thinly slice radishes.
  4. Cut avocado in half, remove the pit, and cube the flesh.
  5. In a large bowl, combine all ingredients: mixed greens, tomatoes, cucumber, radishes, avocado, feta cheese, and nuts.
