Instructions
- Hard-boil the eggs by placing them in a saucepan covered with cold water. Bring to a gentle boil, cover, and remove from heat. Let sit for 12 minutes before cooling in ice water.
- Once cooled, peel the eggs under running water; slice them in half lengthwise and scoop out the yolks into a mixing bowl.
- Mash yolks with mayonnaise, Dijon mustard, salt, pepper, red bell pepper, green onions, and fresh herbs until creamy. Adjust seasoning as needed.
