  • 6 large hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup red bell pepper, finely chopped
  • 2 green onions, chopped
  • 2 tbsp fresh herbs (dill or parsley), chopped
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Hard-boil the eggs by placing them in a saucepan covered with cold water. Bring to a gentle boil, cover, and remove from heat. Let sit for 12 minutes before cooling in ice water.
  2. Once cooled, peel the eggs under running water; slice them in half lengthwise and scoop out the yolks into a mixing bowl.
  3. Mash yolks with mayonnaise, Dijon mustard, salt, pepper, red bell pepper, green onions, and fresh herbs until creamy. Adjust seasoning as needed.
  4. Fill each egg white half generously with the yolk mixture using a spoon or piping bag.
  5. Garnish with paprika and arrange on a platter for serving.
