  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 cups full-bodied red wine (Pinot Noir)
  • 3 medium carrots, sliced
  • 2 medium yellow onions, diced
  • 8 oz cremini mushrooms, quartered
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 4 oz bacon lardons (about 4 strips)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Season the beef with salt and pepper. Dice onions, slice carrots, and quarter mushrooms.
  2. Brown the bacon lardons in a large pot over medium heat until crispy; remove and set aside.
  3. In the same pot, sear the beef cubes in bacon fat until browned on all sides (about 3-4 minutes per side).
  4. Add onions, garlic, and carrots; sauté until fragrant (about 3 minutes).
  5. Pour in red wine and scrape up any brown bits from the bottom of the pot.
  6. Stir in beef broth, thyme, bay leaves, and reserved bacon. Bring to a simmer; cover tightly.
  7. Reduce heat to medium-low and let simmer for 2-3 hours until the beef is tender.
  8. Serve hot with crusty bread or mashed potatoes.
