- 1/2 tsp red pepper flakes
- Salt & black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Roast halved Brussels sprouts on a baking sheet for 20 minutes until golden brown.
- Cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium heat, heat olive oil. Add sliced sausage and cook until browned (about 5–7 minutes). Stir in minced garlic and roasted Brussels sprouts.
- Combine drained pasta with the sausage mixture, adding reserved pasta water as needed for sauce consistency. Season with salt, pepper, and red pepper flakes.
- Remove from heat and sprinkle with grated Parmesan cheese before serving hot.
