  • 2 cups diced celery
  • 1 cup diced carrots
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent (about 5 minutes).
  2. Stir in diced celery, carrots, and minced garlic; cook for an additional 3-4 minutes until softened.
  3. Add rinsed lentils, cumin, and thyme; stir for 1 minute to coat with spices.
  4. Pour in vegetable broth, bring to a boil, then reduce heat to low. Cover partially and simmer for 25-30 minutes until lentils are tender.
  5. For a creamier texture, blend part of the soup using an immersion blender while leaving some chunks intact.
