  • 1 can (15 oz) mixed chili beans
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp chili powder
  • 1 cup finely ground cornmeal
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Add onions, garlic, and bell peppers; cook until softened.
  3. Stir in chili beans, diced tomatoes (with juices), chili powder, salt, and pepper.
  4. In a bowl, mix cornmeal, milk, eggs, baking powder, sugar, and melted butter until smooth; fold in cheese.
  5. Layer half of the meat mixture in the baking dish. Spread cornbread batter on top and finish with the remaining meat mixture.
  6. Bake for 30–35 minutes or until golden brown.
