  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 red onion, thinly sliced
  • Juice of 1 lemon
  • 2 tbsp olive oil (divided)
  • 2 tbsp fresh herbs (parsley or dill), chopped
  • Salt and pepper to taste

Instructions

  2. Cook orzo: Boil salted water, add orzo, and cook until al dente (8-10 minutes). Drain and set aside.
  3. Sear salmon: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Season salmon with salt and pepper; place skin-side down in the hot pan. Cook for 4-5 minutes until crispy and golden brown.
  4. Combine salad: In a large bowl, mix cooked orzo with cucumbers, tomatoes, red onion, and fresh herbs.
  5. Make dressing: Whisk together remaining olive oil, lemon juice, salt, and pepper; pour over orzo mixture.
  6. Toss well to combine; serve alongside seared salmon.
