- 1 cup Fuji or Honeycrisp apples, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 3 cups low-sodium vegetable broth
- 1 cup full-fat coconut milk
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cut pumpkin in half, remove seeds, drizzle with olive oil, season with salt, and place cut-side down on a baking sheet. Roast for 30-40 minutes until tender.
