Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the seeds to create boats.
- In a skillet over medium heat, brown the ground turkey until fully cooked.
- Stir in taco seasoning and black beans; cook for an additional 5 minutes.
- Fill each zucchini boat generously with the turkey mixture.
- Top with shredded cheese and place on a baking sheet lined with parchment paper.
- Bake for about 20 minutes or until zucchinis are tender and cheese is bubbly.
