  • 1 lb ground chicken
  • 3 tbsp harissa paste
  • 1/4 cup fresh parsley, chopped
  • 1 cup whole wheat couscous
  • 1 medium cucumber, diced
  • 2 tbsp lemon juice
  • 1/2 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, combine ground chicken, harissa paste, parsley, salt, and pepper. Mix until just combined.
  2. Form mixture into 1-inch meatballs and place on a parchment-lined baking sheet. Bake for 20 minutes until golden brown.
  3. While meatballs bake, bring water or broth to a boil in another pot. Stir in couscous, cover tightly, and remove from heat. Let sit for 5 minutes before fluffing with a fork.
  4. For the salad, mix diced cucumber with herbs (dill or mint), drizzle with olive oil, lemon juice, salt, and pepper.
  5. Serve meatballs over couscous topped with cucumber salad and yogurt dressing.
