- 1 lb ground chicken
- 3 tbsp harissa paste
- 1/4 cup fresh parsley, chopped
- 1 cup whole wheat couscous
- 1 medium cucumber, diced
- 2 tbsp lemon juice
- 1/2 cup Greek yogurt
- 2 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). In a bowl, combine ground chicken, harissa paste, parsley, salt, and pepper. Mix until just combined.
- Form mixture into 1-inch meatballs and place on a parchment-lined baking sheet. Bake for 20 minutes until golden brown.
- While meatballs bake, bring water or broth to a boil in another pot. Stir in couscous, cover tightly, and remove from heat. Let sit for 5 minutes before fluffing with a fork.
- For the salad, mix diced cucumber with herbs (dill or mint), drizzle with olive oil, lemon juice, salt, and pepper.
- Serve meatballs over couscous topped with cucumber salad and yogurt dressing.
