  • 1 cup heavy cream (cold)
  • 2 tsp vanilla extract
  • 2 cups powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, mash the ripe bananas until smooth yet slightly chunky.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time along with vanilla extract and the mashed bananas, mixing well.
  4. Gradually add sifted flour mixed with baking powder into the wet ingredients. Mix gently until just combined.
  5. Fold in the chopped walnuts until evenly distributed.
  6. Divide the batter between the prepared pans and bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
  8. Whip heavy cream with powdered sugar until soft peaks form. Frost between layers and on top of the cooled cake.
