  • 2 cups fresh blueberries
  • 2 cups low-fat cottage cheese
  • 4 large eggs
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats
  • 1 tsp cinnamon
  • 1 tbsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix cottage cheese, eggs, honey or maple syrup, and vanilla until smooth.
  3. Add the oats, baking powder, cinnamon, and half of the blueberries. Stir until well combined.
  4. Pour the mixture into the greased baking dish and top with remaining blueberries.
  5. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  6. Allow to cool slightly before slicing into squares and serving.
