  • 6 slices thick-cut bacon, diced
  • 4 medium Yukon Gold potatoes, diced (about 1 lb)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Fresh thyme (optional), for garnish

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy (5-7 minutes). Remove and set aside.
  2. Add onions and garlic to the bacon fat; sauté until fragrant and translucent (3-4 minutes).
