  • 1 cup fresh cranberries (or frozen, thawed)
  • 2 large oranges (zested and juiced)
  • ¾ cup granulated sugar
  • ½ tsp baking powder
  • ½ tsp ground cinnamon

  • 2 large eggs
  • ⅓ cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  2. Rinse cranberries and set aside. Zest and juice the oranges.

  4. In another bowl, mix eggs, melted butter, orange juice, vanilla extract, and orange zest until combined.
  5. Fold the wet mixture into the dry ingredients until just incorporated; lumps are fine.
  6. Gently fold in the cranberries.
  7. Pour batter into the prepared pan and bake for 55-60 minutes or until golden brown and a toothpick comes out clean.
