  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 3 medium Granny Smith apples, peeled and sliced
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup brown sugar
  • 1 cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers with melted butter. Press the mixture firmly into a 9-inch springform pan to form the crust.
  3. Bake the crust for about 10 minutes until lightly golden.
  4. In a large mixing bowl, beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, cinnamon, and nutmeg until fully combined.
  6. Toss sliced apples with brown sugar and additional cinnamon.
  7. Pour half of the cheesecake filling over the crust, layer spiced apples on top, then add remaining filling. Sprinkle oats on top.
  8. Bake for 50-60 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least four hours or overnight.
