  • 2 lbs Yukon Gold potatoes
  • 1/4 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 4 slices bacon

  • 2 tbsp Dijon mustard
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly.
  2. While potatoes are cooking, chop bacon and cook in a skillet over medium heat until crispy. Remove bacon but retain grease.
  3. In the same skillet, combine vinegar, olive oil, mustard, salt, and pepper. Simmer for 5 minutes.
  4. In a large bowl, combine warm potatoes with dressing, bacon bits, red onion, and parsley. Toss gently.
