  • 1 lb lean ground beef
  • 1 lb Italian sausage (sweet or spicy)
  • 4 cups fresh spinach
  • 2 medium carrots, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 cup acini di pepe pasta
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • ½ cup breadcrumbs
  • 1 large egg
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large bowl, combine ground beef, Italian sausage, breadcrumbs, egg, minced garlic, parsley, salt, and pepper. Form into small meatballs about an inch wide.
  2. Heat olive oil in a large pot over medium heat. Add diced onion and carrots; sauté until softened and onions are translucent.
  3. Gently add the meatballs to the pot. Brown on all sides for approximately 5-7 minutes.
  4. Pour in the chicken broth while scraping any browned bits from the bottom of the pot. Stir in fresh spinach until wilted.
  5. Add acini di pepe pasta; cook according to package instructions (about 8-10 minutes) until al dente.
  6. Stir in freshly grated Parmesan cheese just before serving.
