- 1 lb lean ground beef
- 1 lb Italian sausage (sweet or spicy)
- 4 cups fresh spinach
- 2 medium carrots, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 cup freshly grated Parmesan cheese
- 1 cup acini di pepe pasta
- Salt and pepper to taste
- 2 tbsp olive oil
- ½ cup breadcrumbs
- 1 large egg
- Fresh parsley for garnish (optional)
Instructions
- In a large bowl, combine ground beef, Italian sausage, breadcrumbs, egg, minced garlic, parsley, salt, and pepper. Form into small meatballs about an inch wide.
- Heat olive oil in a large pot over medium heat. Add diced onion and carrots; sauté until softened and onions are translucent.
- Gently add the meatballs to the pot. Brown on all sides for approximately 5-7 minutes.
- Pour in the chicken broth while scraping any browned bits from the bottom of the pot. Stir in fresh spinach until wilted.
- Add acini di pepe pasta; cook according to package instructions (about 8-10 minutes) until al dente.
- Stir in freshly grated Parmesan cheese just before serving.
