  • 1 cup long-grain rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup low-sodium chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 cups frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, drizzle olive oil and cook the chicken for about 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
