  • 1 cup whole wheat couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Bring 1 1/4 cups of water to a boil in a medium saucepan. Add salt and stir in the couscous. Remove from heat, cover, and let sit for about 5 minutes until fluffy.
  2. While the couscous cooks, chop the cherry tomatoes and cucumber into bite-sized pieces.
  3. Rinse and pat dry the mint leaves; then chop them finely.
  4. In a large bowl, combine the cooked couscous with chopped veggies and mint. Drizzle with olive oil and lemon juice.
  5. Toss gently until all ingredients are well combined. Season with salt and pepper as desired. Add feta if using.
  6. Chill for at least one hour before serving for optimal flavor.
