  • 1 cup cherry tomatoes, halved

  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the spring mix greens thoroughly.
  2. Slice cherry tomatoes in half and cucumber into thin rounds for uniformity.
  3. In a large bowl, layer the spring mix greens as the base.
  4. Top with cherry tomatoes, cucumber slices, red onion rings, and crumbled feta.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until emulsified.
  6. Drizzle dressing over the salad right before serving and gently toss to combine.
